Dubliner Stuffed Chicken


  • 8oz Dubliner cheese
  •  4 chicken breasts, boneless, skinless
  • 4oz bread crumbs
  • 1oz Mediterranean herb blend, finely chopped
  • 2 eggs, beaten
  • 1/2 tsp salt


  • Grate 3 1/2 oz of Dubliner cheese
  • Cut rest of cheese into thin slices
  • Cut a pocket into each chicken breast and fill with the slices of Dubliner
  • In a bowl mix together the bread crumbs, herbs, seasoning, and grated Dubliner cheese
  • Put the beaten eggs in a shallow dish and dip the chicken breasts until evenly coated
  • Press firmly into the crumb mixture 
  • Cook through
