Baked Pasta with Cheese and Stout

Ingredients:

  • 3 tsp butter
  • 2 tsp chopped shallots
  • 3/4 cup of Guinness or other type of stout
  • 2 cups heavy cream
  • 1/2 cup Swiss cheese, grated
  • 1/2 cup Jensen's Extra Old or 5 Year Cheddar, grated
  • 1/2 cup Dubliner cheese, grated
  • 3 1/2 cups pasta of your choice, cooked and cooled
  • 3/4 cup plain bread crumbs

Preparations: 

  • Preheat oven to 350° F
  • Butter a 9 x 13 inch baking dish
  • In a skillet over medium heat, melt 1 teaspoon of butter
  • Add the shallots and cook until soft, but not browned, approximately 3 minutes
  • Add Guinness and cook until reduced by half, approximately 5 minutes
  • Add cream and cook until reduced by half, approximately 5 minutes
  • Remove from heat and cool to room temperature
  • Melt the last 2 teaspoons of butter
  • In a bowl, combine the cooked pasta, cheese, and cream mixture
  • Pour into prepared baking dish
  • Top with bread crumbs, and spoon melted butter over top
  • Bake for 30 minutes until the bread crumbs are lightly browned and sauce is bubbling

*serves 4 as a main course, or serves 6 as an appetizer
