Middle Ages:

 

Our Greatest Contributors - The Monks

During the Middle Ages there were a lot of new developments
and innovation.  We owe a lot of this to the Monks. 

Much of the classic varieties of cheese we have today were
developed in monasteries where cheese making became and
art.  Many of these traditions and methods were passed on
from generation to generation and from monastery to monastery. 

The Middle Ages have been described as the "golden age" of cheese making.
