Blue Cheese Palmiers

Blue Cheese Palmiers

Ingredients:

  • 225g puff pastry, thawed
  • 100g Danish Blue Cheese, finely crumbled
  • 1 cup grated Parmesan cheese
  • 1 egg, beaten
  • Toasted sesame seeds, to garnish

  Preparation:

  • Preheat oven to 425ºF.
  • Mix together the crumbled blue cheese and the Parmesan.  Divide in half, set aside.
  • Roll out half of the thawed puff pastry to form 30cm x 20cm rectangle.
  • Sprinkle half of the cheese mixture evenly over the surface.
  • Roll one side of the pastry half way, pressing down gently.  Repeat with the other side so that the two edges are side-by-side like two connected jelly rolls.
  • Cut in half crosswise and wrap each half in plastic wrap.  Place in the freezer for about 10 minutes or place in the fridge for up to 4 hours.
  • Repeat the above steps with the other half of the pastry and cheese mixture.
  • Line a baking sheet with parchment paper.  Remove the pastries from the freezer.
  • Slice the chilled roll into 1" slices.  Lay on the baking sheet, brush with the beaten egg.
  • Bake for 10 to 12 minutes, or until golden brown.
